As a small step toward sustainability, we’ve joined Meatless Mondays. It’s been around on and off since the first World War with a resurgence in recent years, and it works just the way it sounds. We eat meatless or meat-lite many days of the week anyway, so it’s been easy. Except for the part when I added the bacon fat to Monday’s dinner.
