There’s something deep in my soul that resists the idea of meal prep.

I was a super-obedient kid for my first handful of years, and I honestly think I used up my whole lifetime allotment of rule following before age 18. 

So even when it’s ME setting the rules, all I want to do is break them. 

Meal prep = Sunday Me telling Today Me what to eat, and I hate her. 

You know who I love, though? I love Sunday Me who cooked down all the chaotic veggies in the fridge into a couple of little pots of gold that I can sprinkle onto salads and eggs and steaks and whatever else I want, as obstinately as I want, throughout the week. THAT woman has my back. 

This weekend I made caramelized onions and a weird little bell pepper situation that I adore. And this afternoon I tossed a little bit or each of them into some leftover soup. I look forward to tossing them into something else tomorrow, on an absolute whim.

It’s a game changer ⤵️

I’ll admit it. I’ve been a professional recipe developer for 15+ years, and I was doing cinnamon rolls wrong.

I finally cracked the code to a recipe that I’m 100% thrilled with, and I think you will be, too. These gorgeous cinnamon rolls:

🌀 Are sooooo soft and tender
🌀 With a flavorful, generous filling
🌀 And a creamy, tangy frosting
🌀 Stay fresh for many days
🌀 Are egg-free, and could be made vegan if you like

The secret to this recipe’s super-soft texture and long shelf life is that you start with a tangzhong, a paste of flour and milk that you make by cooking for a couple of minutes before adding the rest of the ingredients. This process gelatanizes the starches in the cooked flour, allowing them to absorb and retain more liquid. It makes for a super high-hydration dough that’s still an absolute dream to work with, and the rolls stay seriously soft and tender for up to a week.

The dough is adapted from a popular King Arthur recipe, with a different baking style. Filling and frosting are cribbed from my own now-dethroned favorite brioche cinnamon rolls. 👑

Hi hi! I’m Carolyn Gratzer Cope, a.k.a. @umamigirl. I’m 47, but don’t I look 23 when I slide all my recipes into the frame in direct sunlight?

I named this whole shebang Umami Girl because when I learned about umami, I suddenly understood what all the foods I’d always loved most had in common. As a recipe developer, I naturally tend to incorporate lots of savory, umami-rich ingredients into the dishes I create. All of the recipes you’ll find here are full of bold, balanced flavors. 

Over the years my website grew from passion project to full-time business. I couldn’t be more grateful for the role that it’s played in my life, or for all of you, who make it possible.

I attended culinary school at the French Culinary Institute in NYC (now part of ICE) and also hold a certificate in Plant-Based Nutrition. But most of what I know about cooking comes from having grown up in a food-loving Italian-American home, and a lifetime of curiosity and self-directed learning. 

Though not directly food-related, my undergraduate degree from Princeton University and JD from Columbia Law School also inform the perspectives you’ll encounter here.

I currently live in the small coastal town of Fair Haven, NJ with my husband, two surprisingly grown-up children, one large dog, and one small cat. When not working on UG, I love to travel, sing (professional and volunteer gigs as a mezzo-soprano), spend meaningful time with friends, volunteer (currently as the Marketing Chair for @monmouthcivicchorusnj), read, and stay in shape (give or take 🙃).

Immersion blender hollandaise sauce is almost too good to be true. It’s silky and luxurious and indistinguishable from hollandaise made using the classic, notoriously finicky method. (I learned that method in culinary school and persisted with it at home for quite a few years, but it’s truly unnecessary when making hollandaise in human quantities in your own kitchen.)

This recipe is:

🤩 Ready in five minutes
🤩 Made with just five ingredients
🤩 Borderline foolproof
🤩 Ridiculously, game-changingly delicious

Hollandaise sauce is an emulsion, which feels like the place where science and magic intersect. Fat and water don’t like to mix, but by creating the perfect conditions, you can suspend tiny droplets of one in the other, creating something silky and ethereal.

The immersion blender method uses the same basic tools as the traditional one — time, temperature, and agitation — but with a couple of twists. For one thing, we let the very hot butter heat the egg yolks just enough as we stream it in, which yields much less risk of overcooking the egg. And by creating what’s essentially a tiny sauce tornado in a cup (a tempest in a teapot, but much tastier), we take the labor and the guesswork and out of the whisking process.

🥧 Buy a pair of really good-quality deep dish frozen pie crusts (my fave is Wholly Wholesome — they’re not sweet, and they bake up beautifully)
🥧 Up to a day in advance, make one Quiche Lorraine for the meat eaters and one Quiche Florentine for the veg-heads, and bake them on the same sheet pan
🥧 You can reheat before serving if you want, but they’re fab at room temperature, too

Potato salad makes me happy. That sounds basic, maybe. I don’t care. (Man, it’s good to be over 40.)

My OG potato salad was a mayonnaisey number from Steck’s Delicatessen in Bridgewater, NJ. In the late 1980s I’d sometimes go with my dad to buy a couple of pounds of it before family parties. 

At Gratzer parties we didn’t just throw a bunch of burgers and dogs onto the grill. You had to declare in advance, publicly, to a man with a note pad and pen, what you wanted. We had some big eaters in the family back then, so it wasn’t uncommon to hear an unabashed, “Two cheeseburgers and three hot dogs, with buns.” You had to declare your buns, too.

Still, everyone seemed to have room for potato salad.

These days I tend to make my own potato salad, and it almost always looks a lot like this one.

🥔 Really good, gold-fleshed, bite-sized potatoes cut in half and boiled in salty water until tender.
🥔 Plenty of crumbled bacon
🥔 A simple, punchy Champagne vinaigrette
🥔 Minced shallot or sliced scallions
🥔 And a ton of herbs

A potato salad like this is super-flavorful but also feels kinda breezy and hot-French-ladyish to toss together. It holds up well on a buffet or at a BBQ/picnic since it’s mayo-free. What else do you need, my friend?

Corned Beef & Cabbage Tater Tot Nachos ⤵️

One bag tater tots (mine was 19 ounces, but don’t stress)
1/4 pound deli-style or leftover cooked corned beef
2 cups shredded green cabbage
2 tablespoons freshly squeezed lime juice
1/2 teaspoon salt, divided
2 tablespoons butter
2 tablespoons flour
1 cup whole milk or beer
4 ounces extra-sharp cheddar, shredded 
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne
1 large scallion, white and green parts thinly sliced

Bake tater tots according to package instructions.

Chop the corned beef into small pieces.

In a mixing bowl, toss the cabbage together with the lime juice and 1/4 teaspoon of the salt. Let it sit until you’re ready to serve, and then squeeze out and discard any accumulated liquid. 

Melt the butter over medium heat, then whisk in the flour and let it bubble for 30 seconds. Pour in the milk or beer and whisk until smooth. Bring to a boil, then reduce heat and simmer until thickened, about five minutes. Off the heat, stir in remaining 1/4 teaspoon salt, the pepper, cayenne, and shredded cheese. Whisk until completely smooth and creamy.

Plate the tater tots, drizzle with cheese sauce, and sprinkle with corned beef, slaw, and scallions.
