Mushroom bourguignon became an instant favorite the first time it landed on our dinner table. Like our super-popular vegetarian gravy, you could argue it’s even better than the original, meat-based version. Mushrooms are flavorful umami powerhouses, and this dish retains all the wonderful, comforting properties of Boeuf Bourguigon, but with a bit of a lighter touch.
