Strawberry Agua Fresca (Strawberry Water)

Agua fresca is a refreshing, nonalcoholic drink popular in Mexico and the United States. Simply blend fruit and water, add a little bit of acid and sugar, strain, and hydrate yourself to happiness. This strawberry version with a hint of vanilla is easy to love.

Ingredients

  • 1 pound strawberries hulled
  • 4 cups ice-cold water divided
  • Enough vanilla seeds to fill the point of a sharp knife or ⅛ teaspoon vanilla extract
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons simple syrup
  • Ice for serving

Instructions

  • In a blender, combine the strawberries with 2 cups of the water, the vanilla seeds or extract, lemon juice, and simple syrup.
  • Puree until completely liquid. Strain the mixture through a fine-mesh sieve or through cheesecloth into a pitcher.
  • Stir in the remaining 2 cups water.
  • Chill completely. Pour into ice-filled glasses and serve.

Notes

  1. I love to have a jar of simple syrup in the fridge all the time. It's great in cocktails and other beverages. If you don't want to make it, you can substitute superfine sugar or experiment with other sweeteners.
  2. I adore my Vitamix, but a regular blender works fine for this recipe.
  3. You can play with other fruits, too. Some great options to start with are watermelon and pineapple.
