Spiced pumpkin cheesecake is autumnal perfection. It's smooth and creamy and full of fall flavors. While it takes a bit of advance prep, it's easier than you may think.

Make the crust

Spread softened butter in a springform pan and coat with crushed graham crackers

Beat the cream cheese, then add sugar little by little and eggs one at a time
